Freezing zucchini

If you freeze zucchini, doesn't it get mushy when you thaw it again?

I have the fairly typical overload of zucchini, and I'm trying to figure out what to do with it besides zucchini bread. If it gets mushy when thawed, though, that wouldn't make it too pleasant to eat. What if I grate it? Would it thaw properly? Then I could use it in bread, patties, or soup.

Off to make more zucchini bread....

Yes, it does.
I do exactly what you say: grate it (or even puree it) before freezing, then use it in soup and stew.

But mostly in zucchini bread. And more zucchini bread. It freezes well, tastes great, and hits the spot for breakfast on a cold winter morning. I've put away about 15 loaves, OR 45 breakfast-for-the-two-of-us portions, this summer. To thaw, I nuke it in the microwave for about a minute, then put in the toaster oven for a few more to reclaim the nice, crumbly texture. Serve with fresh or home-canned fruit. Mmmm....

It also helps, when it is thawed, to drain off the excess water in it before adding to whatever you are making.

I don't know if the soup will hold up to freezing - you won't have chunks/slices, you'll have mush upon reheating. Now, if you've got squash just sauteed with onions and not the coconut milk and stock. you could always briefly cook some tomatoes, add Italian seasonings (if not already seasoned), and combine to freeze as ratatouille. Again, not too great reheated as a side dish, but makes a good pasta sauce.

I watched John Besh pan fry zucchini and small eggplant on his show on PBS yesterday. First he dredged the sliced veggies in plain flour, then put the pieces in a beaten egg and milk bath, then into some Italian seasoned breadcrumbs, then into a half-inch of oil in a frying pan. He cooked them until brown and done on both sides, then made a lovely salad with fresh tomatoes, sliced onion, fresh torn basil, the fried vegetables, some shaved Parmesan cheese and a light vinaigrette. gardenwebber: I DO freeze shredded zucchini/squash all the time (4 cups in a quart-sized ziploc). I thaw completely. I open just a corner of the bag and partially drain off the "water". Don't squeeze it all out, just what flows out freely and easily. I then use the squash cup for cup in zucchini breads. My recipe does not come out dry. I'm sure it can vary from recipe to recipe and even more so for something besides bread. You can also use the shredded squash in soups, stews, add to meatloaf, make zucchini patties, muffins, etc. Do a google search for shredded zucchini recipes and find lots of ideas. You don't mention your particular level of cooking experience (and there's no need), but if you do have some experience, you should be able to adjust the moisture content as needed (i.e. you understand how thick muffin batter should be and can add liquid or dry ingredients as needed or squeeze out more moisture to make patties). Hopefully, some of this is helpful. Try freezing just one bag overnight, thaw and use it in a recipe to see if it's something that "works for you". Deanna

Well.....after freezing, it won't remain "a little crunchy"...it will pretty well all be like frozen veggies thawed. I make that....I call it "zuccnini glop"...my kids and friends call it that too....for want of a better name I guess. I cook the basil with the veggies....flavors meld better and I add easily 1 tablespoon of chopped or "scissored" basil per cup....fresh basil with tomatoes is a good thing!!\ I have frozen it lots and lots....and it does come out mushy.....can't be helped when you freeze zucchini and tomatoes. It will keep safely pretty much for years.....and I haven't noticed any deterioration in taste after a year. Yummy stuff!!....sometimes I add fresh parsley and oregano.

In Cooking Light (www.myrecipes.com), there is an October 2002 recipe for a squash rice casserole. I use up my extra zucchini preparing the first step of steaming the onion and zucchini. I drain it in a strainer, mash it, then let it drain some more. I add in the two cups of rice and freeze it at that point. When I'm ready to make it, I thaw it, drain again, add the rest of the ingredients and make according to the directions.

How about making zucchini relish with some ?
I am planning on making zucchini whoopie pies with marshmellow filling for my grandson. Good way to add some more veggies to his diet and still be a fun treat.
