Rusty jar ring contamination?
Comments (7)Unless the seals have broken and you have juices of fig leaking out, or water leaking into the jars, I doubt it. 95% of the seal is done when they are filled, capped, and the rings are snugged down before placing in the canner. Rings can rust at any time, especially if they were used previously for a corrosive pickle juice and a bit of the BWB had made it into the glass and metal threads. The ONLY way these might be tainted is if the lids were used over again, and have even a microscopic cut in the non corrosive surface on the inside of the lid. I have seen pickle juice eat right through a metal lid that was reused. Needless to say the pickles were not safe to eat, as they has soon decayed and dried to a dark mass at the bottom. In your case, just look to see if there is more liquid or a thinner liquid that is at a higher level inside ech jar. You can carefully unscrew the bad ring and either leave it off, or carefully wipe the glass threads, and place a clean dry lid on for extra protection against a lid popping off. If all is done right, it should be fine. For water bath water in hard water areas, add a tablespoon of white vinegar to the boiling water. It reduces the whitish coating left by the high calcium and mineral content of the water....See Morerings on jars, bells on toes
Comments (14)I always remove the lids and wipe the jars and threads. No matter how well I clean those threads, I still got rings that rusted to the jars. I distinctly remember a batch of carrots that got put away by the kids without removing the rings. I was almost to the point of throwing the jars away, rings and all, because I couldn't get the darned things off. I finally took a flat head screwdriver and ran it around the top of the ring, then the bottom, and removed them. Bent the heck out of the rings too. Now I always remove the ring, just like the instructions say to. As for the white plastic lids, I like them and have about a dozen of each size. When I open a jar of something, I put a white lid on it. Some things I like cold, like apple cider or tomato juice. I'll put a jar in the refrigerator and forget that it's unopened and open another jar. The white lid reminds me that it's open and needs to be used. Yeah, I know, the memory is the first thing to go. And yes, I know I could use the ring for that, but I tend to remove the rings from the canned goods that are going to the basement and reuse them on the next batch of canning. I have way more jars than I do rings, and so I don't want to use them for refrigerator storage during canning season. Annie...See MoreI found the jars, the lids, and the rings...
Comments (18)You know Dick laughs at me when we travel...and I go "Ohhhh...a WalMart!!" Well, I can find the odd canning jar that I can't find here. I don't know about NoVA but I can also find things at the Annapolis Farm store. I bet there might be some of those lurking in VA still. And what about Wegmans? esp the one out Reston way. btw, on this note, I got some 12oz canning jars in Shoppers for $6.99 about 3 weeks ago. I happened to be in Safeway for my final 99c peaches and checked their jars. A fr*ckin" $13.99 a box!!!!!!! And...do I have to go to Canada to get those small 125ml (2oz?) Bernardin jars?
