Too many ripe mangoes

I got a great "deal" on mangoes at my wholesale food store - made some "to die for" Peach Mango Jam but that calls for green mangoes and the leftovers are so very dead ripe now. What to do? I've never made any fruit leathers but that might be an avenue - have any of you made leathers from mangoes and if so, what did you add to make them special? Or, Mango Curd to stash in the freezer (like Lemon Curd)? NCHFP Mango salsa is refrigerated but just how much of it can you eat in a week or two? And does it freeze OK for middle of winter enjoyment? I guess this post should be "Mango Excess". So, perhaps you have a mango cake, tea bread, cookie, cheesecake recipe for me?
