Is it safe for a pressure canner weight to jiggle continuously?
Comments (3)Safe as in is the food safe to eat? Yes. Safe as in is it safe to run the canner that way without risk? Yes as long as you are sure the over-pressure plug is in good working order, that gauge reading is accurate so that you know the real pressure, and if there was enough water in the canner to begin with so you don't risk it running dry due to all that excess steam escape. But it isn't ideal in that it can result in over-processed food of lesser quality. Mirro canner weights are machined to jiggle/spin 3-4 times a minute when at pressure so continuous jiggling would indicate pressure in excess of 15.5 -16 lbs or more and if the guage is off even a little you'd have no way to know what the pressure was until the plug blew. Comments (12)Thanks again for the wealth of knowledge! The forum is so helpful! Our second batch (20 pints of creamed corn) went MUCH smoother. This time we removed the canner from the stove element and it seemed to cool quicker...maybe 20-30 minutes. I followed the instructions at the NCHFP website for cooling: " 9. After the canner is completely depressurized, remove the weight from the vent pipe or open the petcock. Wait 10 minutes; then unfasten the lid and remove it carefully. Lift the lid with the underside away from you so that the steam coming out of the canner does not burn your face. 10. Using a jar lifter, remove the jars one at a time, being careful not to tilt the jars. Carefully place them directly onto a towel or cake cooling rack, leaving at least one inch of space between the jars during cooling. Avoid placing the jars on a cold surface or in a cold draft." Maybe I missed waiting another 10 minutes between removing the canner lid then removing the jars? We had quite a canning day yesterday! We canned 20 pints of creamed corn, 5 quarts and 7 pints of peaches, and 4 half pints of peach butter (had to do something with those extra two pounds of peaches!). The height of the 23 qt presto made for easier HWB quart canning versus my granite ware HWB canner. I have two more questions... 1-when we canned our peaches, we followed the recipe in the ball blue book for peaches canned in syrup. We went with the hot pack method in heavy syrup (50/50 ration of sugar to water). Now that everything is processed, the peach slices have floated to the top of the jar. I know it'll taste the same but it doesn't look as pretty lol. Any recommendations? 2-when using the presto to pressure can, I've waited until the safety button pops up to start timing the ten minutes of continuous steam coming from the vent pipe. Typically there is a funnel shaped flow of continuous steam before the safety button pops up, but I guess I just want to be sure I'm expelling all the air. Is there any harm in doing it this way? Comments (13)Which kind of weight do you have? I've got two Mirro's...old one has the disc shaped weight with 3 holes drilled into the sides for 5, 10 or 15 lbs. It just sits on top of the pressure valve. It jiggles nicely (grin), but if I leave the heat cranked up on high it will go beyond jiggling to some other "thing". Not hiss, not jiggle, but...oh, I don't know, Scream? Closer to hissing but louder and faster. Heat's too high........ My new one (last year, brand new) has a 2-piece weight that has to be screwed on after selecting the appropriate "ring" for the weight you want. It sort of spins and hisses more than jiggles. On the up side, like Carol said, it's not going to blow up. They both allow the excess pressure to escape and the pressure plug would blow first. I like the old one better (figures), but it's time for a new seal!! Did you turn the heat down once the regulator started to move or did you leave it on high? Maybe try it a few more times to get a feel for what it's supposed to sound like. I know my new one took some getting used to (I'm not good with change... smile). Comments (10)I have the three-piece regulator for my Presto. Funny they listed it as an accessory in the old manuals but now half the time if you call the company they pretend it doesn't exist. The nice thing is with the three-piece regulator the gauge becomes the backup. In essence, the Presto becomes a weighted gauge rather than a dial gauge canner. It's a way of emulating the All-American setup. Fortunately, we have an Extension office here in town and they do still test gauges, but those gauges are so chintzy it doesn't take anything to throw them off. I'd rather rely on a machined weight. One way or another they're all a pain. My original canner was a Presto. After 30+ years the bottom developed stress fractures so I "retired" that one in favor of an All-American. I just picked up another 23-quart Presto at Bimart for $59.99, which is an incredible buy. It'll make a great stand-by canner.
