Mama's spicey cabbage recipe

Another recipe from Mama. A great cook who had to feed a family of 7 with very little money and a great imagination.

1 lg. head of cabbage, washed and cut up into small pieces

1/4 cup olive oil

2 to 3 cloves garlic

1/2lb. hot sausage (or mild)

1/4lb. piece of pepperoni (remove casing if artificial)

1 Italian ham end approx. 1/4lb. or skins from Italian ham or both if you can get skins.

In large fry pan on low heat saute above ingredients slowly till sausage starts to cook, stirring to keep garlic from burning.aprox. 5 to 7 min.

Add the cabbage with 1/2 cup of water.

Cover and cook till cabbage is tender

Stir and check to make sure liquid is not drying up,add more water if needed.

Collage Inn chicken broth can be used instead of water.

When cooked, cabbage should be tender and there should be some liquid in pan.

Remove garlic and Italian ham skins,if using ham ends you can cut up and add back to dish.

Served with nice Italian bread this dish can be a meal or a side dish, it is spicy!
