HI All-
There was an article in the Sunday Chicago tribune food section of September 10,2006 on Christine Ferber, entitled "a day in the country" that highlights her jams.
I was so surprised when they started talking about processing the jams and the individual spoke of the, "oven temperature".
Can you process jam in the oven? I thought it had been determined that that was not a good thing? Is this thought just something that Americans subscribe to? Is processing jam in the over done a lot in places outside of the U.S.? I cant paste the article into the post (the last time i did that, I got dinged by the garden web police) but the article is on Sunday sept 10, 2006 and it seems like they are processing the jam in the oven!
Is anyone familiar with this process?
