Kay, as long as I don't fill the pan too full it doesn't even spatter, just kinds of "bubbles" around the edge. I stir it every couple of hours.

My sister does make this recipe in the crockpot and it does fine in hers but my new "hot" crockpot tends to make the edges crusty if I don't tend it faithfully. The oven works better for me but I'm thinking one of those big Nesco roasters would also work pretty well.

Food processor? Go for it, any way you can get those apples smushed up will work! I cook the apples whole until they are soft and run through the food mill, you could do it anyway you like.

so you don't peel or core your apples? Just let the food mill take care of all that stuff? Much easier!! but I do not have a food mill.

I wonder if I could use one of those corers that cuts the apple into 8 wedges while coring. Then I could toss the wedges into the food processor. Might work since I prefer a bit of texture.

We have some apples coming in now, but no fresh cider so I'll wait a couple of weeks.

I often make applesauce with salvaged windfalls, so there's a lot of cutting to do (bruises, worms, etc.)

I don't use a foodmill. I peel, core and chunk apples, cook, add a bit of sugar if necessary, and can. There's a little bit of texture that way.

More work at the beginning with the prep but less work at the end.
