Roasted Field/Dent Corn - Yummmmmmyyyyy

Hello all,

I planted Bloody Butcher Dent Corn because I like red. I thought I'd get a few ears of corn that were red. Well I got pink corn because I picked it at the roasting stage not at the corn meal stage. It looked exactly like popcorn only it was pink. I cooked that corn wrapped in parchment which was wrapped in foil. 400 degrees for about 30 minutes. I'm addicted! I need more!! I have no more!!!

Recipe:

Preheat oven to 400 degrees

First you find some field corn (dent corn) that has been harvested at the roasting stage

Husk the corn

Place each cob of corn on sheet of parchment paper (or just use foil but parchment is better)

Salt to taste

Black pepper to taste

Sweet Ancho chili powder to taste

Sprinkle ear with Grana Padano or Parmigiano-Reggiano cheese -- can use Parmesan if needed (Shaky Cheese)

2 tsp butter per ear

Wrap corn in parchment and then in foil place on baking sheet in oven

Bake for 30 minutes

Remove from oven - unwrap - enjoy!!

Field/Dent corn is not sweet like hybird corn. It has a warm nutty 'corn' flavor.

I wish I could find a local farmer to sell me some field corn..........
