corn salsa recipe?

Hi all,

I am looking forward to a great corn harvest this year and am already thinking what I should do with the corn. I often freeze it, and I think I will can some creamed corn (ha! See Carol? I DO need a pressure canner!!). I made corn relish last year. I have to admit, we weren't wowwed by the corn relish - it's a little too "relishy"! I would like to find a corn salsa that I can can. I found this recipe, not for canning, just for a corn salsa. Could I can it in the pressure canner? If not (or even if so) do any of you have recipes for corn salsa? I don't really want corn and beans, and that's all I found when I searched the forum.

Any other ideas for corn? Thanks.

INGREDIENTS:

* 2 cups frozen corn kernels, thawed

* 1/3 cup chopped purple onion

* 1/4 cup chopped red bell pepper

* 3 tablespoons chopped fresh cilantro

* 2 tablespoons fresh lime juice

* 1 to 2 tablespoons finely chopped jalapeno pepper

* 1/2 teaspoon salt

PREPARATION:

Combine all ingredients in a small bowl. Cover and refrigerate for 2 to 4 hours. Remove from refrigerator about 30 minutes before serving. Serve corn salsa with grilled meat or poultry.

Makes about 3 cups corn salsa
