Comments (14)As others have said you can use the pressure canner if it allows 2 inches of boiling water above the jars. Be very careful, however. Two years ago I was using this method and had locked down the lid leaving the vent open as JodieMo suggested earlier. A small amount of pressure had built up and when I removed the lid, the superheated water exploded up out of the canner and burned me quite badly. I still have the scars to prove it. This was a very old canner (it has since been retired) and did not contain the pressure lock that modern Presto models have. However, I will never again lock a pressure cooker lid down for boiling water processing. Comments (4)How long are we talking about? If less than 24 hours, fine. Longer than that and they fall outside the safe-to-do guidelines. It not only becomes very risky but also leads to a notable decllne in quality. You'd do better to remove them from the jars and freeze them now. Since green beans is one of the vegetables most at risk for botulism issues, trying to re-do them poses a greater risk than with some other vegetables. What really concerns me is "after years of babying this thing along ". That would seem to indicate a long-standing problem that could easily have affected the safety of the foods done in the past as well. I was packing the grapes to within 2" of the top, then topping off with juice to 1/4", per the Ball Blue Book advice on juice. maybe I'll try 50% with the fruit next time. and yep, I try to leave the jars in the canner for awhile to gradually drop pressure and temp, b/c I noticed that if you open it too quickly they will start boiling over right in the jars! cheers...See MoreCan you let your jars cool in your pressure canner?

Note steps 8 and 9 in the link below that explain the canner sit for 10 min after the weight is removed but before the lid is removed. Plus I need to correct myself when I said "slide" I meant lift and sit rather than slide. http://nchfp.uga.edu/publications/uga/using_press_canners.html You could siphon floral - with great care - but there is only about 3 inches of water in the pot anyway. In this case the problem is the clearance height. The stoves with the low-set vent hoods or the ones with the microwave right above the range top just aren't at all convenient for canning.
