zucchini pie filling?

I've used extra zucchini to make a fake apple pie before, and its pretty good. What I'm wondering is if it would be safe to take and substitute zucchini for the apples in a canning apple pie filling recipe? Maybe a little more lemon juice?

No, sorry. There's a world of difference between zucchini and apples. A little more lemon juice won't be sufficient, even if we knew how much it would take.

Zuchini is not recommended for canning in any form unless it is only one ingredient in something like soup or stew that is otherwise acidic. Zuchini relish is OK because it has a high amount of vinegar. I'm not sure of the reason why they say it's not to be canned but botulism is not something to take chances with. I'd pass on that one.

SSSSHHHHHH Michelle don't tell them where you got the Fig preserves from. Fig preserves Â Mes Confitures INGREDIENTS 2 1/4 lbs (1 kg) fresh black figs 3 3/4 cups (800 g) granulated white sugar Juice of 1 lemon 2 vanilla beans TO DO 1. Rinse figs in cold water and wipe dry with a clean towel. Remove the stems and quarter the figs. If they're particularly large, cut them into eighths. Split the vanilla beans lengthwise 2. Combine the figs, sugar, lemon juice, and vanilla beans in a non-reactive bowl. Cover, ideally with a piece of crumpled, damp parchment paper. Set aside to macerate for an hour. 3. Pour the contents of the bowl into your preserving pan and bring them to a simmer. Return them to the bowl and cover again. Put this into the refrigerator for at least eight hours, or overnight. 4. Prepare your jars for canning. 5. Again return the fruit mixture to the pan. Bring it to a full boil. Skim off the foam if you care about that sort of thing. Continue cooking until the mixture comes up to 221Â° F (105Â° C) -- about 5 to 10 minutes. Remove the vanilla beans near the end of the process. Stir gently as it cooks. 6. Pour the jam into jars and seal. Note: I don't let the mixture come up to 221Â° or it turns to concrete. I just go by feel.

I have millions of apples, too. Instead of canning apples for pies, I freeze those in pie-size portions. Putting Food By suggested freezing them using a pie plate as a form, so the frozen disc fits in the crust, but I wasn't so good at that. For canning dessert slices, I use Pomona Pectin at half the recommended rate, and it thickens the low-sugar juice just a bit. Alternatively, add no thickener and thicken the apples with cornstarch when you make your pie. I can applesauce, dessert slices and apple jelly made from "nectar" from peelings and cores(yum!), but not apples for pies. We also dry some of our apples, and freeze lot of frozen chunks for making juice or wine in the winter. Plus we give a lot away!

This sounds real good to me. I im like Ginger i know them as fried apple pies. I will have to try the zucchini it sounds good. And my mother in law keeps me in the zucchini this year. I have a frezzer full of zucchini bread and shreddedv and slice some as i need it for latter. And she is still gin\ving me some. Dh said he thought that he was going to turn into a zucchini. Ilene

Duh...I feel dumb! When I made the first batch a few weeks ago, I looked in all my books that follow NCHFP guidelines and did not see any recipe except the one in Ball Complete. I thought it was odd that it was only listed for pints and odd that it wasn't in So Easy to Preserve. I don't know how I missed it. As soon as I saw your reply, I rechecked and lo-and-behold...there it is. Thank you SO MUCH! The pint size is perfect for the cobbler recipe I have, so I don't think I'll make it in quarts, but at least now I can fill my canner. Thanks again! Jill

No,sorry. It cannot be canned like that. As was said, in relishes or for pickles, and one safe recipe with the right amount of tomatoes as a mixture. That is about all that is safe for zucchini.

As all the others have said, canning is out but you can slice it and then freeze or dehydrate the slices to use this way later. Dehydrated zucchini slices have lots of uses.

Boy am I glad I asked, I just made zucchini relish and thats what got me thinking.... but sometimes that has gotten me in trouble before, dont want to poison any of my kids or me.

No, sorry. The only recipe with a pressure canner is if the zucchini is mixed with acidic tomatoes and pressure canned. It is such a low acid vegetable that the PC processing time it would need to be safe would turn it into slush.
