Green Tomato Pickle Relish Makes about 2 pints. 8 cups chopped green tomatoes 2 large onions, chopped 1 sweet red pepper, chopped 1/4 cup coarse pickling salt 1 1/2 cups cider or white vinegar 1 1/4 cups granulated sugar 1 tablespoon mustard seed 1 1/2 teaspoons celery seed 1/2 teaspoon turmeric 1/2 teaspoon cinnamon Combine vegetables, Sprinkle with salt and let stand several hours or overnight; drain and rinse with cold water. Combine remaining ingredients in large saucepan and bring to boil. Add drained vegetables and simmer uncovered about 15 minutes, stirring occasionally. Pack into hot sterilized jars and seal.

The original recipe called for green bell peppers. I used red because I love the way it looks in the jars. I think yellow and orange would also be pretty. We just got in from picking everything in the garden. We have gone longer this year without a frost warning, and even though it was getting cold, they said there was no frost warning up until 5:00 PM this evening, and then all of a sudden weather.com was issuing a FREEZE warning for our area. Picked about 50 lbs. of green tomatoes. More than half should ripen without a problem. The rest will make pickles, and relish. I always freeze some for frying, and some for that great green tomato bread recipe. I hope you try the relish recipe and enjoy it as much as we do.

Soonergrandmom, This is the recipe I use for Green Tomato Pickles. It sounds like it would be similar to what you are wanting. Thanks for your post reminding me. I am going to make some today. :) Dawna Green Tomato Pickles 1 gallon green tomatoes, cut into chunks 1 cup green and/or red bell peppers, cut in square chunks 2 cups onions, cut in wedges or chunks 1/2 cup jalapeno peppers, sliced Bring this to a boil and pour over veggie mixture: 2 cups vinegar 2 cups sugar 2 Tablespoon canning salt (a little red pepper if needed) Bring entire mixture back to boil and simmer 10-15 minutes, stirring occasionally ). Don't bring to a full boil for more crisper pickles). Ladle into sterilized jars, water bath 5 minutes to insure a good seal. Makes 7-8 pints. The original recipe said to cook for 20-30 minus (with no water bath) but I thought that cooked the stuff too soft. You can use your own judgement on cooking time.

Green Tomato Hot Dog Relish Flavorful green tomato relish is the perfect relish for hot dogs and hamburgers, or stir some into your dressing for pasta or potato salad. Ingredients: •8 cups finely chopped (processed or ground) cored green tomatoes •2 cups finely chopped (processed or ground) peeled onions •4 bell peppers, part red, finely chopped (processed or ground) •1/3 cup pickling salt •2 tablespoons mixed pickling spices •1/2 teaspoon celery seed •1 clove garlic, chopped •2 1/4 cups white vinegar •1 2/3 cups packed light brown sugar Preparation: Combine the chopped vegetables and salt in a large stainless steel pan. Cover and let stand in a cool place (about 65° tF to 70° F) for 10 to 12 hours, or overnight. Pour the vegetables in a colander over the sink and let drain. Rinse with cool water and use your hands to squeeze out any excess liquids. Tie the pickling spices and celery seeds in a cheesecloth spice bag. In a large stainless steel or enamel-lined pan, combine the vinegar, the spice bag, chopped garlic, and the vinegar. Put the vinegar mixture over high heat and bring to a boil, stirring until sugar is dissolved. Add the drained green tomato mixture and bring the mixture to a boil. Reduce heat to medium-low and boil gently, stirring often, for 1 hour. While the mixture is cooking, prepare the work area, canner, jars, and lids. See Preparing Jars for Canning and Boiling Water Processing. Fill hot, prepared jars and remove any air bubbles with a small plastic spatula, leaving 1/2-inch headspace. Clean jar rims and fit with lids and rings. Process in a covered boiling-water bath canner for 10 minutes. Turn off heat, remove the cover, and let jars stand in the hot water for 5 minutes.
