canning beets today, questions

I am using the BBB recipe for pickled beets for a second attempt. Last time they tasted a little too vinegary (used cider). Not like the old recipe version my grandma made. Is it ok to add a little more sugar and dried spices? I know not to add more fresh spices to recipes. And do I have to keep the beets hot? What if they get cooled off, is it ok?

Also, is it ok to peek into the BWB canner to see if the jars are still covered in water. I have the Presto 16 qrt.
