Habanero Gold wins again!!!

I entered Annie's salsa and the Habanero gold in my county fair. The salsa didn't win anything this time,but the Habanero gold took first place, and was chosen the Judge's Choice award! So out of everything that placed first, the Habanero Gold took top prize!!!! I'm so very excited, and this was only the second time I entered anything!!! I just wanted to thank everyone for all that you do on this site. I never would have been brave enough to can anything with out all the help from here!

Last night I made the small batch recipe and have a few questions. Since I have seen on other post not to double jam recipes I did two seperate batches to process at once. Chopped apricots soaked in vinegar overnight(Fri), next morning I had to leave so I put the apricots into 2 seperate plastic containers(Sat) Arrived home too late to do , so Sunday afternoon I continued, chopped and measured peppers and onions and cooked into 2 seperate bathces. I measured very carefully. The first 3 jars (1/2 pints) there was about 1 tbs. left, the second 3 jars, there was about 1/3 pints left. Why? All set up quiclky as I wasn't even able to move around to mix in the peppers and onions. Is the jam still okay considering the fact that the apricots were soaking for two days? Cuppboard or fridge? Next time I will try the big batch. Any difference in taste as I really liked the flavor of this one?

I dissolve the Pomona in some of the juices used by the recipe I am making. As to the amount for a batch, that varies of course whether there is natural pectin in the product, and also if sugar is still used to make the natural fruit pectin set up. Pomona only ensures that the product will set by adding a more stable pectin that can be controlled . According to my individual packets of Pomona the amount used for a batch of JAM will be something like about 1/2 to 3/4 teaspoon per cup of fruit, and for JELLY about 3/4 to 1 teaspoon per cup of fruit juice. The instructions also state that if its a low acid food thats to be jellied or jamm-ed, you do need to add lemon juice at 1 Tablespoon per cup of fruit or juice. The instructions state that you should try making a small test batch of 1 cup before doing the whole batch. In this way you can figure out how much sweetener to use. Interesting to note that the instructions also state that a food processor or blender is needed to properly dissolve the Pomona. Adding it as a powder to a boiling liquid will cause it to clump up and solidify. For a hot pepper jelly, they mention that 1 1/2 teaspoons of Pomona are needed for a batch of 3-4 cups. The calcium is mixed with water at 1/2 teaspoon calcium to 1/2 cup water, and can be stored in the fridge for a few monhs if not used up. You should also make the calcium water before starting the jelly cooking. The single Pomona packets contain 9 teaspoons of pectin, and plenty of calcium for a whole box of pectin. Ok, so I made the confetti jelly this weekend... I used Carol's larger batch recipe. I brought four dried habaneros (8 halves or various sizes from very small to large) just to a boil in half the vinegar and then steeped it for an hour or so. I used the other half of the vinegar to soak the apricots, which I microwaved for a few seconds to warm them up. When it was time to make the jelly, I used tongs to remove the peppers and squeeze them slightly. I used one jalapeno in place of the 1/4 cup of fresh habanero. It worked fine and is plenty hot enough for me. When I made a second batch, I used a long red pepper (since I was out of jalapenos). This time it was part of the 1 1/4 cups total of peppers and onions. (I was using up the very last of the peppers I had bought.) The sugar was not dissolving well and it seemed quite thick, so I ended up adding another 1/4 cup of vinegar to the mixture. It seemed thin when the jars were still hot. I ended up having to twirl it several times, but it set up fine as it cooled. It doesn't move when you turn the jar. I made the inferno wine jelly. I probably should have steeped the dried peppers ahead of time. It will need a different name as it is more like mild pepper wine jelly. This one foamed quite a bit. It didn't have as many peppers as a percentage so it was frustrating trying to skim the foam without taking the peppers too. In recipes that have more peppers, I don't worry if I skim out a few. I probably won't bother to make this one again. I'm taking a break from pepper jellies for a few weeks. I have over 40 jars for the craft fair now.

Thanks bcskye! I am excited about the next fair beginning Monday in another town about 50 miles away. I am not expecting to win anything though...but we will see! This IS addictive. My friend who encouraged me to enter has been doing so for years. Last year she had 124 jars entered and won a ribbon on almost all of them! However another lady had 160 jars and beat her out on points for ribbons. I was really just enetering to get free passes for my kids and grandkids! LOL. Now they have me hooked. I am already planning what to enter next year! Nanahanna

Good for you! My granddaughter won a Grand Champion ribbon last year with the Habanero Gold, I won a Reserve Grand Champion this year with the salsa.

It's fun, isn't it? Happy Canning.

Wow, That is awesome!! I didn't get anything for the salsa,but someone that had corn in theirs won first for salsa. Wish you could talk to the judges to know what they didn't like!!!! I said mine was mild,but maybe it was a little to warm for mild? I didn't think so! LOL!!! Now I have to try to find something else to enter to try to win the same prize I did this year,they pick something unique and really different!!! Any Ideas!!! LOL!!! It is really fun!!!!

Well, other winners here were pickled beets, it seems that no one cans them any more. We also got a ribbon for heirloom tomatoes, I canned the Great Whites all by themselves, so they were a lovely creamy color and attracted some attention. The rest were for baked goods, my 9 year old Princess is an avid baker and her 7 year old brother is an avid taster, LOL.

Oh, and KatieC's Chipotle Catsup took a second and I love the stuff, I can't believe it didn't do better.

So, if you can get the Judge's attention and make them remember your particular product, that helps. My nephew won a couple of years back with Root Beer Jelly. Yup. Oh, and LindaLou's Zucchini Candy won that year too.

Hey, maybe RobinKate's Tomato Marmalade with white or yellow tomatoes and oranges and lemons. Or one of those recipes with pineapple and white/yellow tomatoes....

Thanks! I will have to remember about white tomatoes!!! I will look into KatieC's Chipotle Catsup that sounds yummy! We have to move our garden we have some trouble with out tomatoes and were told they can't be planted anywhere near where we had them for at least 5 years.:( Some kind of fungus and it just wipes them out! I was told by my extension office,and the master gardeners, to go ahead and can them, the tomato it self was ok! So I sure hope they know what they are talking about!
