Past discussions about them list all sorts of things - added to salads, potato salads, relish trays, sandwiches, snacks, as a side dish, anyway you'd use a pickle. The amt of peppers called for seems sufficient for most who make them. Just as with all recipes, more flavoring can always be added after opening and provides better results. Too much added up front ruins more things than it improves. The pepper flakes are boiled with the rest of the brine to infuse their flavor. The flavor is evenly distributed that way. Adding things directly to the jar only insures UNeven flavor distribution from jar to jar. Same applies to the garlic since you aren't using cloves. You are unnecessarily complicating the process for yourself by focusing on the amount of beans rather than the recipe. That approach only leads to errors in measurements and unsatisfactory results. The focus is the recipe instructions, not the amount of beans. If you have left over beans use them some other way, left over brine, refrigerate it. So stick to the recipe (I don't know which one you are using) or halve it or quarter it. Don't try to alter the recipe to fit the beans. That's putting the cart before the horse. Size jar is your choice as long as it doesn't exceed what the instructions call for. Sterilizing the jars isn't required, just process for 10 mins. Comments (15)finally found my pickled carrot recipe ... it was in my cooking recipe data base because it is NOT for canning, but as noted it keeps up to a month refrigerated. It' best with fresh harvested carrots, but is not bad with regular store bought. I usually spring for organic. PICKLED CARROTS Makes 10 servings Source: Gourmet, November 2003 (originally November 1985) Good snack. Keep chilled in an airtight container up to one month. 1 pound carrots cut into 3 1/2 x1/3 inch sticks 1 1/4 cups water 1 cup cider vinegar 2 cloves garlic lightly crushed 1 1/2 tbsps dill seeds 1 1/2 tbsps salt Blanch carrots in nonreactive saucepan of boiling salted water, then drain in a colander and rinse under cold water to stop cooking. Transfer carrots to a heatproof bowl. Bring remaining ingredients to a boil in saucepan, then reduce heat and simmer 2 minutes. Pour picking liquid over carrots and cool, uncovered. Comments (7)The best ones we ever made were from a French Fillet bean, a very, very slender bean, half the dia of a pencil, and done up with white wine vinegar, garlic, and lots of dill. The drawback was packing the things into the jars, it seemed to take about 15 minutes to pack a jar, and about 3 minutes for my kids to eat it, and to get the kids to help pack them was like pulling teeth. Now, we use an immature, flat Italian type bean that is still very tender when its about a foot long, so I can snip one in half. So, like Gardenlad sez, any bean will work. Only recipe thing I can think of is adding tarragon to the jar, and two dill seed heads is just about right for a qt. Comments (7)After my grandfather died, my grandmother thought it was a waste to throw out his blood pressure medicines, and so she started taking them herself, even though her blood pressure was fine. The idea that throwing something out that no longer has a purpose because it would be wasteful is misguiding thinking. Eliminating things that are not useful is a good thing. You can use the brine as suggested, for a potato salad or as a flavoring, but I would not consider using it again in pickling. You could possibly use it for cleaning your kitchen floor.
