Couple of recipes, are they okay to can?

This first recipe is one my Grandma made for years. We all loved it, but after she passed away, no one has made it. Is it okay to use it?

Grandma's Hot and Sweet Green Tomato Pickles

1-1/2 gallons green tomatoes, quartered

2 quarts red (or whatever color) bell peppers, quartered

3/4 cup salt

1 tablespoon alum

Mix and let stand overnight.

Next day:

2 qts onions, quartered

6 cups sugar

1-1/2 qts vinegar

3/4 cup cayenne peppers, ground

Bring to boil and can at once.

Makes about 18 pints.

This next recipe is one someone gave me and I'd like to try it. Do you think it's okay?

Zucchini Salsa

10 cups chopped ziucchini

4 chopped onions

2 chopped red peppers

5 chopped jalapenos

8 cloves minced garlic

1 tablespoon pickling salt

2 tablespoons dry mustard

1 tablespoon cumin

2 cups vinegar

1/2 to 1 cup brown sugar

2 tablespoons aleppo pepper flakes

1 teaspoon nutmeg

5 cups chopped ripe tomatoes

12 ounces tomato paste

There were no instructions, so I am assuming bring to a boil for 10 minutes and then either water bath for 10 or 15 minutes?

I would love to make this to use up some zucchini. I've already made zucchini relish and zucchini with tomatoes.
