adding and changing herbs and spices in stewed tomatos

Hi again,

As i stare at my just canned tomatos i am wondering, i used the herb mix, lemon juice and salt like the recipe called for. Can i add things like fresh chopped or dried garlic, onions, and even olives? would that change the bwb time? can my stewed tomatos be safe?? would i have to use my new Presto pressure canner??

You can't add fresh anything, so fresh garlic, onions and most definitely olives are out. Olives are low-acid AND fatty. Besides, they're so easy to add when the mixture is heated it's kind of a waste of space.

Dried herbs and spices or dehydrated garlic or onions can be added as you wish.

If you like tomato soup, you've got to try a batch of this: Roasted Tomato Garlic Soup (2006, YUM!!!) Recipe By :Katie C 12 tomatoes -- *see Note 2 carrots -- cut in 1" pieces 1 large onion -- quartered 2 whole heads garlic -- peeled (or more, to taste) olive oil 2 cups chicken broth -- (or 3) 1/2 cup chopped fresh basil -- (or 1 Tbsp. dried) cream -- to taste DO NOT CAN WITH CREAM. Core tomatoes and cut in half. Place, cut side up, on foil covered cookie sheet with carrots, onion and garlic. Brush with olive oil. Bake at 400F for about an hour, or until vegies are roasted and a little blackened. Place in a large saucepan with the chicken broth and basil and simmer for about 10 minutes. Blend with a stick blender (or in small batches in a blender) until almost smooth. Add cream to taste. To can: Process in a pressure canner, pints for 60 min. and quarts for 70 min.For dial gauge canners use 11 pounds pressure at 0-2000 ft., 12 lbs. at 2001-4000 ft., 13 lbs. at 4001-6000 ft. and 14 lbs. above 6000 ft. For weighted gauge canners use 10 lbs. pressure at 0-1000 ft., and 15 lbs. over 1000 ft. *Note: These measurements are approximate...I use whatever it takes to cover the cookie sheet. This makes 1 1/2 to 2 quarts of soup. The (2006 YUM!) comment is mine. I am sad because I didn't make enough. 1) the chopped size is really your choice. It is a personal preference issue, not a safety issue, and depends on the texture you want to end up with after opening the jars. Just as with salsas, the bigger your chopped pieces to begin with the chunkier the mix will be when the jars are opened. Some prefer the soupy texture, some don't. So as long as you end up with 16 cups the safety aspect of volume remains the same regardless of the chopped size. 2) I too make them with all sorts of varieties but some require more draining up front. The problem is if you over-drain you end up with an overly dry mix (been there, done that). It is still safe to eat but overly dry, taste is affected, and I worry about effective heat penetration just as with any overly thick product. So the solution I use is to just drain the big juicy varieties briefly and leave most of the juice in the mix. The jars, if overly soupy can be drained after opening just as we do with many canned foods. Better too thin for safety than too thick. 3) the juice or citric acid is a relatively new added safety factor by Ball to several of their recipes. It was added to compensate for just the issues you have asked about - a way to insure safety given the different methods used by different people when making. So in some ways it is sort of optional. If one has the experience to know for sure they have measured accurately and have a good balance of solids and liquid for good heat penetration I suppose they could leave it out. But personally I don't find the citric acid changes the flavor so I add it. Dave PS: edit to add I have also made them using bottled lime juice instead of lemon - very nice flavor enhancement.

Tomato Dumplings /2 cup finely chopped onion 1/4 cup finely chopped green pepper 1/4 cup finely chopped celery 1/4 cup butter 1 bay leaf 1 quart diced tomatoes, undrained 1 tablespoon brown sugar 1/2 teaspoon dried basil 1/2 teaspoon salt 1/4 teaspoon pepper DUMPLINGS 1 cup all-purpose flour 1-1/2 teaspoons baking powder 1/2 teaspoon salt 1 tablespoon cold butter 1 tablespoon snipped fresh parsley 2/3 cup milk Directions In a large skillet over medium-high heat, saute onion, green pepper and celery in butter until tender. Add bay leaf, tomatoes, brown sugar, basil, salt and pepper; cover and simmer for 5-10 minutes. Meanwhile, for dumplings, combine flour, baking powder and salt in a bowl. Cut in butter. Add parsley and milk; stir just until mixed. Drop by tablespoonfuls onto the simmering tomato mixture, creating six mounds; cover tightly and simmer for 12-15 minutes or until a toothpick inserted into one of the dumplings comes out clean. "a dry spice mixture I can make to add to the jars upon opening that will add some more flavor." Have you tried any of the many spice blends that are available commercially on grocery store shelves? Knowing which of those you liked or didn't like would narrow down the options at least a little. Things like Cavenders, lemon/pepper/garlic, Chinese 5-spice, cracked peppercorn and herb, Carbbean Jerk, smoked paprika/garlic, onion, Adobo, etc. just to name a few all work well for flavoring tomato-based foods. Morton's for one brand, makes many of them and we use them just like salt and pepper for flavorings. Dried herb blends, not so much. They need time to sit and reconstitute for flavor. Chinese 5 Spice 1 teaspoon ground cinnamon 1 teaspoon ground fennel seed 1 teaspoon ground star anise 1 teaspoon ground Szechuan peppercorns ½ teaspoon ground cloves Cajun Spice Blend 1 tablespoon granulated garlic 2 teaspoons salt 2 teaspoons ground black pepper 2 teaspoons paprika 1 teaspoon Cayenne pepper Dave

Can I ask what recipe you used for making your "stewed tomatoes" that allowed them to be processed in a BWB? What herb mix are you referring to?

The approved recipe for Stewed Tomatoes (p. 69 BBB) requires pressure canning - pints 15 mins. and quarts 20 @ 10 lbs. and always has.

I guess i renamed the recipe. It is not Stewed Tomatoes it is Crushed Tomatoes from the Ball complete book of Home Preserving.
On pages 354-369 Tomato Processing in a Boil-Water canner recipes are given and i made the crushed tomatoes on pg357. I added the Italian Spice Blend from pg359(dried herbs and spices).So then in theses recipes i can only use dried spices not fresh and no veges, but i can use most dried spices and dried veges,dried mushrumes, dried etc or am i taking it over board to the next level?

Ahh makes a big difference! ;) Yes that is a safe recipe and very different from Stewed Tomatoes. And the separation, the floating, you saw is common. You can gently shake the jar or just ignore it and they will settle all on their own with some time.

So then in theses recipes i can only use dried spices not fresh and no veges, but i can use most dried spices and dried veges,dried mushrumes, dried etc or am i taking it over board to the next level?

You can use dried spices, yes. They don't change the pH. Just do it carefully as the dried spices will intensify during storage. Too much can ruin the whole jar.

Dried vegetables is another matter. They DO change the pH and they can also change the density. They have to be rehydrated before adding them and you need to rehydrate them in vinegar or bottled lemon juice, not in water, and they can be used only in very small amounts.

Don't make assumptions about recipes without checking first. That can easily get you into trouble. ;)

I am soooo glad i came across this website
My tomatoes are the best (Balls Tomatoes)no matter the cost (within reason) i will now go today and get 20lbs of tomatoes and go crazy i am so pleased with the outcome.
I opened a jar last night (just couldnt wait)and you are right the tast will intensify over time it is strong now so i will use less herbs for the ones i will not eat now. we all were just eating them out of the jar.
