Digdirt Re: Tomato and Apple Chutney Recipe

Dave,

It has only been a few weeks since I made the chutney, but I couldn't wait to try it. The husband and I warmed it and put it on baked Brie like the Ball Book recommended and it was good. However, it was better on sharp cheddar cheese on crackers. I halved the recipe and came out with five half pints. Husband liked the chutney much better than he did the Tomato Marmalade, so I will definitely make the chutney again. I'm new to chutneys so I'm not sure how else to serve it....any suggestions?

Well I can only tell you how we use it - some are kind of far out. ;)

We mix it in with plain rice for a side dish, mix it with cream cheese for a cracker spread, wife makes a mean salad dressing with in by mixing it with a basic vinegar and oil salad dressing. I like to use it on baked potatoes instead of butter and sour cream and I mix in into plain yogurt for a snack. Makes a great relish on hamburgers and ham and cheese sandwiches too. If you make panini or grilled sandwiches of any kind try it on them too. A nice thick grilled ham and cheese with chutney stuffed inside before grilling can't be beat.

And here is the weird one - or so the grandkids tell us - we mix it with ranch dressing and a dash of hot sauce for buffalo wing dip.

Thanks for the suggestions. The rice dish and grilled ham and cheese sandwich sound good! I'll definitely have to try the chutney in the buffalo wing dip too.

but I'm wondering if I could can it? It has basically the same ingredients as the above recipe except the onions and celery. Personally I would probably be comfortable with it but my opinion and $1.25 gets you a cup of coffee when it counts and I sure wouldn't recommend it to others as safe. The olive oil is VERY restricted in canning use can easily be left out but even with a detailed list of the exact amount of each ingredient there is simply no way to know for sure because it isn't a tested recipe so we'd just be guessing. #1 cardinal recipe of canning safety - You can't safely can your own made up recipes. Don't know the pH or the density, and density could be a real issue with this, so can't compute the PC processing time that would be needed. Sure, if you added citric acid it would be safer but still no way to know if it would be safe enough. Stick with freezing. :) Dave

Thanks for the critique of the recipe. I did make it but with apples and what was left of my pears. It's not my taste but neither was the Peach Salsa and so far DH is eating the Peach Salsa on just about everything! The fresh orange plus rind is wonderful though. Now rereading the recipe, I did forget to put in the salt. LOL! Oh well.......... Michelle

The recipe looks safe - you're cooking the onions and garlic (the only low acid vegetables) for a long time with lots of high acid fruits, vinegar, citrus, etc. You might find the Produce Purchase Guide on Ball's website helpful for converting pounds to cups and vice versa. Regarding grape jelly, you don't need pectin with that because when you cook grapes or grape juice down it jells on its own. When I make jams and jellies and fruit sauces the amount of time I cook things affects how much product I get. I just try to keep an infinite amount of jars and lids on hand. :-) I scored about 150 pint jars this summer, from my recycling center. It is a lot of work to wash them, am only about half-way through, but I like to be prepared! Marcia
