Thanks for that link. I just froze some mangos and that bread does look good! I have a hard time freezing the mangos, I like to eat them as soon as I get them.

I made the mango bread today, it's good but I didn't really taste the mango. I found some other recipes that I will try later.

What does everyone else do with their mangos? Anyone have a jam recipe?

Do you think this would work? Does anyone have that many mangos?

8 c. pulp
4 c. sugar
1/2 c. lime juice

Cook in microwave for 45 minutes. Stir every 10 minutes. Put in jars.

I like to use mangos to make Mango Curry with either Chicken or Shrimp. I don't really have a recipe, I just kind of improvise. I'll try to summarize a recipe below.

If using chicken, cut into bite-size pieces and saute with garlic in olive oil, then set aside.

Dice onions and bell peppers and saute with garlic in olive oil.

Add curry powder, salt and pepper. Use red pepper flakes if you like it hot.

Add coconut milk and simmer until it starts to thicken a bit, about 5 minutes. (Sometimes I add a couple tablespoons of peanut butter at this point and stir it in well.)

Add some tomatoes cut into bite-sized chunks.

Add cubes of mango. I use not-quite-ripe mangos since they hold together better when you cook them.

If using shrimp, add them now also. Otherwise add the chicken back to the pan.

Let simmer for 4 more minutes.

Serve over rice and sprinkle with chopped cilantro.

That sounds like a great recipe Babalu!
The Jam recipe sounds doable. I think you also need to do a water bath with that. Or maybe refrigerate after cooking. Maybe I'll do half of the Jam recipe.
Now I need to find more Mangos!

It's chilling now. I'll add some shrimp to it for supper.
I did add some ginger and garlic to the dressing, and some thinly sliced bok choy to the salad.

Well, that was awful.
In case you got tempted by the pretty pictures, don't bother.
The banana blossom was bitter and tough.
The flavor was pretty nasty too. And I was careful to remove all the immature fruits.
Maybe I put in too much ginger. It overwhelmed the salad.
But that wasn't the whole problem for sure.
Not something I'll be trying again, unless I find myself in Bangladesh with nothing else to eat.
It looked and smelled better in the compost bin.

Awww, that's too bad Treefrog, it sure looks good in the picture. Wonder if the age of the blossom would make a differance?
I put about 3/4 of a cup of mango in my processor with a little lime juice and put it on my Mango Bread, now it taste better!

"Banana flowers are picked from the end of a bunch of bananas when the fruits are half grown. Removing the flower at this time will not hurt the fruit. Flowers from eating bananas have a bitter taste and should not be eaten. Only flowers from cooking varieties are eaten. They are used in meat, fish, or shellfish dishes"

So you're only supposed to eat plantain-type flowers? Do you think there's that much difference in taste? Do you think Treefrog will want to try again? (I think not!)It sure was pretty looking compost, tho.

I make a Mango Salsa that I serve on coconut battered fish. I just add coconut to the batter mix and saute the fish till it's brown. I make the salsa with chopped Mango, kiwi, strawberries and Cilantro. I've also used some fresh pineapple or whatever else I have around that sounds good. Sometimes I add a tiny bit of creme of coconut to the salsa. After the fish is cooked, put the salsa over it. Served with beans and rice and fried plaintains. Yum-yum. It's my new favorite meal.

The dinner wasn't a total loss. The shrimp were good and rice. We had some laughs about the banana boat. And a couple of cocktails (not as pretty as yours though).

I wish I had seen that about plantain flowers before I made it. But I won't be making it again anyway.
I have a bunch of black sapotes on the table just about ripe. In fact one I have to whip one up tomorrow. More on the tree too. I had one a few days ago.
There's a little girl in the neighborhood who loves them, so I give her some to take home when she comes around. I love when kids don't turn their noses up at fresh grown fruits and veggies.
Not many mangoes around the neighborhood this year, must be an off year for them. But I still have a little in the freezer from last year along with some frozen carambola juice. In the blender with some lime juice, it makes a great drink. Suck on a miracle fruit first and it's a sweet delight.

I love mango salsa too, and mango chicken.
