Soon to be making tomato sauce, any insight into process

Please..just learning how to can. If this system could be streamlined or improved, and especially if you see that it's not safe, please let me know. I am dealing with a lot of tomatoes.

1) I quarter and place into large cauldron. Simmering for eight or more hours until desired consitency.

2) Strain from one cauldron to another standby cauldron,(leaving the skins and most of the seeds behind)

3) Fill up jars and give them 45 minute water bath.

4) Remove from water bath and wait for lids to pop.

Appreciate any insight, was also curious about the vitamin content of the tomatoes after such a long simmer, a friend told me the vitamins don't dissipate but your the experts. Thank you, lot of good reading here.
