pool landscape advice - trying to avoid st. augustine?

Just finished building a pool, and now we have a large, mucky area of dirt around it. Close to the fence on the right have a four foot area all around the fence where I've been planting inside an area I marked off with bricks.

I'm looking for suggestions for this muddy area beyond the pavers (to the right of the pool in the second photo) that will provide ground cover and look nice but maybe won't involve st. augustine grass, since it's so hard to take care of. I thought about river rock pebbles extending for a few feet beyond the pool, but I'm not sure. Or maybe sod is simply the way to go? Any ideas? I want people to be able to walk around the area.
