Floating Dilly Beans

The recipe in the Ball book for dilly beans was such a great hit last year, that I repeated this year's harvest with that same recipe. However, this time the beans floated.

The only difference that I can relate to is my extreme care in making sure the water in the canner was lowered below boiling. According to recent postings that I found refreshers - the water liquid in the jars and canner liquid should be about equal in temperature. This is for cold-packed foods. So I brought my boiling canning water down to 140 degrees or thereabouts. (Recommended for cold pack foods).

In the past cannings of this recipe, I am sure my canner water was much hotter, as I was also sterilizing the jars in it first.

I haven't tasted my beans as yet, but am curious as to why they floated this time. Also, whether they might not be cooked enough.
