Canning meat - after

So with the help of the search function on this forum, I managed to can my first batchs of venison. Things were a little hectic on the first run, trying to get all the meat cooked and in jars and into the canner in reasonable times. Things were much smoother on the second batch.

So this was a week ago, and I'm super excited to try my new creation.

My problem is none of the info I could find told what to do after canning other than check seals, wipe them down,and storage reccomendations.

I read one source that said to wait at least two weeks before eating, is this true? Other than looking for mold and bad seals and smells, can you reccomend anything else? I'm excited to try them, but a little intimidated as well.
