cordial recipe

I have an excess of loganberries freshly picked and would like to make some cordial ,can anyone help me with a recipe please I have a BWB and a PC and shortly will have raspberries ,strawberries,mulberries and blackberries ,I always make jelly and Jam and would love to make my own syrup and cordial

I posted these once before, but here they are again.

BLACKBERRY LIQUEUR

2 Cups Fresh Blackberries, picked over and rinsed
1 Cup Sugar
1 Cup Vodka
1 Cup Brandy
1 Cup Light Corn Syrup
1 Tablespoon Fresh Lemon Juice

Place Berries in a clean 1 gallon jar and add Sugar. Crush the berries with a wooden spoon and let stand for one hour. Add Vodka and Brandy, cap tightly and shake. Add Corn Syrup and Lemon Juice. Let stand in a cool dark place for 2 weeks.

Use a fine mesh strainer to strain our solids and discard them. Rack or filter into final containers. Cover and age one month more before serving.

RASPBERRY LIQUEUR

1 1/2 Pounds Fresh Raspberries, picked over and washed
1 Cup Sugar
3 Cups White Zinfandel
1 1/2 Cups Vodka
2 Cups Water

Crush the Raspberries and Sugar together in a bowl, let stand for one hour. Transfer to a clean glass gallon jar and add the Wine, Vodka, and Water. Cover tightly and shake gently. Let stand in a cool dark place for 3 days, shaking daily.

Use a fine mesh strainer to strain out solids and discard. Rack or filter into bottles, seal with corks and age at least one more month before serving.

No BWB or PC is necessary for either one. Have Fun!

Maybe add this 'spent' fruit just before the time its almost ready to be poured into jars. Raspberry plants are produced by runners that send up new canes every year. First year canes are leaves only, but in the second year they produce berries. After that, they die off. Adding waste raspberry seeds will usually not give you more plants. I had runners sprout up more than 10 feet from my canes. Also have a few blackberry canes, and they seem to be just keeping to themselves, and don't travel much. Some blackberry or black raspberry canes will root from the tips of the canes. At that time, new canes emerge from that initial rooting. Imagine both ends of a blackberry cane growing in the same soil near each other. Which end do you pull up? I use an organic fruit tree fertilizer and its given me many red raspberries every picking season. The fert is from Gardens Alive and is their maintenance fertilizer. There is also a 'build up' formula, but that was only needed to get the nearby fruit trees to grow healthy. Both contain a necessary trace element called boron, which should neer be used on anything but fruit trees. The boron helps the fruits to have a fully developed, with no ungrown patches. Also, it can correct deformed strawberries, but is only lightly applied every 2-3 years.

I've made cordials from wild black cherries and from wine berries (a wild berry similar to, but not the same as, red raspberries. The color of each was sensational and the taste was very good. The cherry cordial was deep garnet red. The wine berry cordial was a beautiful rosy pink. My purpose was to preserve the essence of those fruits, which were not useful for most other purposes in the small quantities I had them. I used vodka in about twice the volume of the fruit and added a cup or so of sugar to the partial liter bottle at the same time. Not very specific I know, but I think the proportions are not critical. Just be sure there is an ample quantity of spirits so spoilage doesn't happen. I let the cordials age in a cupboard for several months, shaking them up occasionally. Then I strained them. There was no trouble at all with clarity. I had intended to make a blackberry cordial, but somehow I missed the peak of the season. I want to make some citrus cordials now. I will use the zest. Later, maybe I will attempt something like Benedictine or Chartreuse. That would be a fun challenge. Making cordials takes very little effort and pays off with a nice product. Jim

I am not the original poster of the blueberry mango frangelico, although it is on my to try list. I think Carol or Annie first posted it. Carol also has a great spiced blueberry ajm recipe, I could post it if I was at home. Here is a recipe for Blueberry lavender jam, as well as notes from when I first made it. -Robin Blueberry Lavender Jam 2 tablespoons dried lavender flowers 1 11 1/2- ounce can frozen white grape juice concentrate 3 cups fresh blueberries, washed and drained 1. Make a lavender sachet: Cut a piece of cheesecloth into a 6-inch square, place lavender in the center, and tie into a bundle with kitchen twine. 2. Cook the jam: In a heavy saucepan over medium heat, bring lavender sachet, grape juice concentrate, and blueberries to a boil. Stir constantly to prevent burning until the berry mixture jells -- about 20 minutes. (To test whether mixture has jelled, place a teaspoonful on a plate and let cool to room temperature. Lightly touch the berry mixture with your finger to see if it has consistency of jelly. If not, continue to cook for 10 more minutes and check again by using the same test.) Cover and steep for 2 hours. 3. Store the jam: Remove the lavender sachet and discard. Divide the jam between 2 pint jars. Cover and store in the refrigerator for up to 1 month Note: To modify it so I could can it I just simmered it with the lavender for 20 minutes than removed the lavender (which I had in a teaball). I also made one where I soaked the lavender overnight in the grape juice, yuck too much lavender.

I learned a long time ago not to buy those bird seed mixes! I have stopped buying black oil sunflower seed because it attracts too many scavengers, especially grackles. I only buy safflower and niger now. I ordered 50# bags of each; don't remember exact prices; no doubt will be higher this year. The niger is primarily for the finches; grackles don't like safflower seed, and we don't have squirrels here. So the safflower is for the Cardinals, which I am trying to encourage, with minimum success because across the road from me are plentiful woods which they prefer. This spring I had seen a couple Cardinals in and out of the (ornamental) pear tree and then one day I heard a peep, peep and there was a nestling on my back porch rail. I watched and sneaked out the back door from the garage and got close enough to snap a picture. Soon Mr. and Mrs. Cardinal came by and had a discussion with him(?) and he got brave enough to attempt to stand up. I snapped a second picture and soon after all three were gone. Steve, can you use a cheaper brand of vodka, brandy and zinfandel on those? And what about frozen fruits that have no sugar added... Thx, Beth

Hi dirtgirl07! You sure can, I usually use the "house brand" at my local purveyor of spirits, and they are just fine. Frozen fruit too, works great because they only freeze at the peak of quality, and they are very consistent.

Check the link for blackberry acid-a fruit concentrate that you add to ice and soda etc.to make a non alcoholic drink. It's not a canning recipe, but could be easily frozen. I saw them make it on TV and it looked wonderful.

This blackberry cordial recipe is from a 1985 Ball Blue book... no longer included in new versions. Which means it is either no longer popular enough to have in the new book OR there is a safety issue with it.....so hopefully the "experts" will comment on it's safety, or again, you can just freeze it.

There is also a really good strawberry-lemonade concentrate recipe in the Ball Complete Book Of Home Preserving.

Blackberry Cordial (caution:1985 BBB)
To 2 quarts blackberry juice, add 3 cups sugar, 1 tablespoon each whole cloves, whole alspice, whole cinnamon, and whole nutmeg (tied in bag). Simmer 30 minutes. Bring to boiling. Discare spice bag. Pour boiling hot into hot jars, leaving 1/4 inch head space. Adjust caps. Process pints and quarts 15 minutes in boiling water bath.

I sure don't see any safety issues with the blackberry cordial recipe. I think this is probably due to lack of popularity or just being replaced by some newer recipes in their books.
If you want a syrup recipe for using over icecream or waffles, etc. there is a good one that I have used quite a bit. If you want it I can resend or you can probably search for it. Let me know if you would like that type of syrup recipe.
