I just thought you might be interested in my experience today with some lime jelly which I just finished, using homemade pectin. Remember when we were discussing this - about a year ago or so?
Anyway, at that time I made a batch of - either lemon or lime pectin (Costenbader book), and preferred to freeze it for a later date. Yesterday, I found it in the bottom of the freezer, and barely remembered what it was for.
Anyway, this a.m. I squeezed some limes, added the pectin and sugar called for - brought to a boil - was easy.
It turned out well, and I just finished a nice English muffin with the fresh jelly and a cup of tea. Those Brits have something there!
I'm not sure I would make it often, as it is necessary to make the pectin first - so it becomes a 2-part procedure. But it was fun.
