What have you put up, 2008, part 1

Yes, I know I've been missing in action, but I've still been canning and freezing happily away. I've put a half a beef and a whole pig in the freezer, and I've made sweet Italian sausage and pancetta.

I was hoping to put some salmon in that freezer, but the score after this year's salmon run was Salmon: 3 Annie: 0. LOL They all got away.

So, I decided that since I had New Year's Day off, and it was cold and snowy, I should free up a bit of space in my freezer and can some beef stock and beef vegetable soup. I took about 15 pounds of soup bones and some veggies, roasted them until nicely browned, then added bay leaf and other seasonings and simmered it into stock.

My final tally? 7 pints of beef stock and 9 pints of beef vegetable soup. Those pints will be perfect to take to work for lunch on those cold winter days when I don't want to walk home for lunch!

Next project, I think, is some cranberry salsa as a birthday gift for my boss.....
