I have a Moringa, but haven't tried eating any parts of it yet. However it is called the Horseradish Tree, because the flavor of the root is supposed to be similar to horseradish. I linked below to Wikipedia.

The leaves do have a unique taste. I wouldn't call it bitter. Did you pick the old leaves? Did you just use the leaflets without any stems? If the tree did not have sufficient wate the leaves may tend to be bitter. Usually we use the young leaves that have just matured. The older leaves are harder to cook and are bitter.

When I went to the ECHO moringa presentation in March, I tasted only one fresh leaf and I didn't notice any flavor. However, when I eat the leaves from my seedlings, I do notice a spicy flavor. In addtion to eating the leaves fresh, I dry the extra leaves and put them in foods just before eating.

fagopher, it sounds like you are tasting what you should. My 2 month old seedlings are nearly 2 feet tall and growing rapidly since the nights have gotten warmer. I did not find any reference to cooking the moringa leaves in my moringa book, called "The Miracle Tree". (Purchased at the ECHO bookstore.)

The moringa leaves I have eaten were rather bland but that was last fall after the wet season. I suspect the flavor will vary depending on the moisture available, the age of the leaf, the nutrients available etc.

Moringa tastes real good if cooked. We cut it to very tiny pieces. A food processor may do a better job if you know how to use it.
Anyway saute the chopped leaves in oil with some garlic, peppers, onion and whatever else you want to add. We add small fried shrip to the mixture also.
