I don't know of any bell pepper (any pepper for that matter) that remains green at full maturity. I suspect it'll turn red, but possibly it might be one of the yellow/orange/chocolate types.

I have read there is varieties albeit few that do stay green. Just wanted to make sure this is not one of them.

You are aware that if you wait for them to mature to their final color the plants will stop producing, right? Like most veggies, once they sense they have produced mature seed that will germinate their job is done....

I have read that, what I have been doing is cutting them once the fruit look like they are getting close to ripe. So far, the plants have continued to produce and coming to third season on most of my pepper plants. The peppers taste allot better when they are ripened.

Nope, me neither, do you have the one they offer that grows to 4'? I got a nine-pack a few years ago that just grew monster plants and peppers, never had anything like it in a Bell since, still not sure what it was....

As far as I know they have one 1 hybrid they produce and it is called Bonnie Bell. So I think it is the same. The plant is probably 3 foot now with nice sized leaves, a really nice looking plant. The fruit are substantial in size. Probably the same thing.

I went to show my neighbor yesterday one that I picked who is also growing bells, needless to say she said, 'oh my gosh thank you, it is huge!' She was so happy I could not tell her I was only showing it to her. I was kind of bummed. :)

I am growing the same variety from Bonnie, and I also have their "red" bell and "yellow" bell. I really have the same question. I figured that the red and yellow will begin to turn that color when they are ready to be picked and that the green will stay green. I guess when the green is full size and starts to change color a little, it's time to pick it. My peppers are only about 2 inches long right now and I'm new to peppers. I hope I pick them at the right time.

They're using the word 'maturity' differently than we would use it. In market gardening peppers are picked at two stages, one is mature or 'mature green' when the fruit is fully developed, but not yet showing any signs of ripening. Ripe is when the fruit has changed color.

Bonnie sometimes sells the Keystone Giant variety and they can make a rather large plant and a big fruit.

I think your probably right about that. During our discussion with the "grower" at Bonnie he said something about comparing peppers to tomato's. He said a tomato is mature after example 75 days. It may be green but it is mature. He said they will then turn red.

He was real vague about it though. To hammer him down on what he meant by mature as if we had two different definitions of mature.

So I think Alan probably got it right. It just comes down to terminology.

He went onto say though that the Bonnie Peppers when they turn red (that is post maturity) will begin to decline in flavor. I told him I thought they got sweeter, maybe again perspective is playing a role.

ok i am a first time pepper planter, i think i am having some problems, i have a ton of little bell peppers on plants so is producing, but they are turning red before reaching 4 inches long, and i think i have a bug or something eating them, right when they start to turn red or are red, (holes in peppers and shriveling up and dying) is it ok to pick when 3 inches? or any other suggestions would be very helpful and appreciated
