Do these veggies just produce once, or all season long?

Hi all!

My son & I are planting our first "real" vegetable garden. So far we have planted radishes, spinach, peas, beans, corn, tomatoes, yellow squash, zucchini, watermelon, cukes, iceberg lettuce, cantelopes, broccoli, eggplant, and cauliflower, all with varying degrees of success. I only planted half of each packet of seeds, planning to plant again later in the summer to get a second crop. My question is, do any of these veggies produce all season long, or do they just produce once and that's it. If any of them are "one timers", my plan is dig them up & plant new seeds in their place after "harvest". But obviously I don't want to do this if they'll keep producing after they have been picked.
