Defoliating Question from Newbie

All of you were so helpful with my last question so here goes some more:

1) When defoliating to remove leaves that don't look too good, do I just remove the affected leaf so do I remove the bunch (3 or 5 or 7)? Is it better to pinch them off or cut them?

2) I've gotten my sawfly larvae problem under control but they did wreak havoc on my Knockouts. Should I remove the affected leaves (there are lots of them), or do I just leave them be?

3) Just bought a Hybrid Tea Peace to accompany my Tropicana (boy am I loving them). The Peach has tons of foliage compared to the Tropicana. Should I remove any foliage to allow for good air circulation? It's very humid here in MD and I'm worried about black spot and fungus (haven't seen any yet)?

Just joined this forum a few days ago and have so enjoyed reading all the posts. You folks sure do know roses and how to care for them!
