Deadheading and rebloom on Excellenz von Schubert

Hi all,
Hope your summers are kicking off nicely. It finally warmed up here in Northern California in a BIG way.
Do you need to deadhead the flower clusters on EVS to get it to rebloom?
Does this rule apply to all Hybrid Musks, since I now also own Cornelia and may get a couple more HMs.
On a few of the clusters, I noticed tiny little bulbs that look like hips. Even if I don't necessarily dead head, should I remove the hips so that it reblooms? (I keep reading everywhere that once a rose sets hips it is done for the year.)
And do you just pinch/snip off the top of each flower stem, or can I snip off the entire flower cluster (i.e. the tip of the branch). I read that they react negatively to having too much pruned and don't know how much is too much for an HM.
