Revived roses - now what?

I bought a house with six neglected rose trees (?). I took 3 years to get all the permitting and construction done on a major remodel/extension. During those three years they didn't get watered or fertilized but still threw up a few leaves and looked like Charlie Brown's Christmas tree.

After we moved in, instead of pulling them out as an act of euthanasia, I decided to show them some love and see what would happen. I cut them back, fertilized, used soap/neem oil to keep pests at bay, and lo and behold, the old girls started pumping out color!

So here's the thing....now what? Meaning...at what point of flower development to do cut them off the tree? Do I do any kind of pruning now, or not until the winter? I am noticing some leaves getting yellowish or having black spots or both. Do I spray for that or use something systemic in the ground?

Thanks. I now have the best roses on the block!
