What types of organic matter will improve soil drainage?

Hello

Call me a newbie at this. I've been on gardenweb for a while now, but I still know very little about soil.

Okay, first of all, I want to know: if it says a plant likes "evenly moist" soil, will a "well-drained soil" be alright?? I know that if they like "evenly moist" soil, obviously they like moist soil, but if it stays moist too long the roots will begin to rot, right? What I'm getting at here is: how do you know if the soil is "evenly moist" or "well-drained" if it's kind of a little bit of both?? Also, how do I know which kind I have?! I'm just so confused. Where do you draw the line between the amount of moisture a plant needs versus how good the drainage needs to be to avoid the plant rotting? How do you know whether your plants needs are compatible with the characteristics of your soil?? Somebody PLEASSSE help me with these agonizing questions.
