Roses that are suitable for "limbing up".

Last summer, as I walked through a small garden center, my eyes caught what I thought was a beautiful small ornamental tree. Indeed, it was a large Mutabilis rose that had been trained/pruned into a small tree. I asked the owner about it and she said her husband (who is not a rosarian) kept trimming the rose up to get it somewhat out of the way of the customers. It really was beautiful and I regret not having my camera with me to take a photo, because this rose at the edge of their little sitting area looked perfect in that setting.
I am very curious to know if this is a common practice, what types of roses would work better for this type of growing, and how is this done?
