I am cooking for the week. Tonight we had sausage with semi hot peppers (still picking from the garden). The store had a special on chcken thighs which make the best broth, cooked those and deboned, stuck in the freezer for either soup or noodle cassarole, made stuffed shells, and for tomorrow, made up meatloaf, whichI will bake with yams, potatos, onions. Going to cut up amd mariante some beef to make chile con carne. Don't have every night covered, but pretty close.

Oh, and how can I forget, Dh's aunt brought over a cherry and peach pie. Umm-mmmm.

Supper was easy and convenient tonight. That's because I worked two college play off games this afternoon. Stopped at the local grocery store and picked up pre-boiled shrimp. Served it was crackers and a generic salad. Washed it all down with a couple glasses of white wine, seafood and all that. Had a chocolate mouse for dessert. Today was a classic fall day. It was like the aberrant summer had not occurred at all. At least it feel that way. 50 degree weather may not seem or is supposed to be cool-ish, but after this summer my sense of weather is all skewed....

Turned down a play off final tomorrow. All because I'm going to look at a house boat that is for sale. That's all I have to do tomorrow so I'll probably take the time to cook properly. Don't know the menu yet, but will give it serious thought tonight.

My version of a casserole: Ro-Tel diced tomatoes, brown rice and kidney beans, salted to taste. Iced tea. A bag of sliced raw almonds for dessert.

Pub food: bangers and mash, with some stewed tomatoes (canned!). Good for a chilly, rainy day.

Barbecued flank steak and vegetables drizzled with olive oil and spices, wrapped in foil and cooked on the grill.

Take out chinese and some shiraz, not the best combination. By myself tonight, Leone , daughter and granddaughter and granddaughter in-law all at a shower.

Sometime around three a.m. I was frying the last 3 large green tomatoes and ate them all myself...just that and nothing else. DH was fast asleep and doesn't really love them anyway. It was my farewell to hot weather...finally getting a taste of Fall here.

Thick sliced bacon with cheese omelet and of course grits for supper tonight. With ripe red tomatoes...the good ones will soon be gone for another year. josh

Rib-eye steak, a baked potato & a green salad. Not exactly heart healthy, but it tasted great on a chilly night.

Friday we had fish chowder, with enough left over for Saturday. I spent the day at the farmers market Saturday for our Harvest Festival ... that chowder sure tasted good after being in the cool air all day.

Today we had Spinach-Lasagne Rolls, spinach filling rolled in lasagne, covered with sauce and mozzarella. Yummy !

One-dish meals are my fav, always some left over for the next day.

At 6:23 a.m., my mouth is watering! What great sounding meals you've all eaten. Yesterday, I fixed no supper at all, 'cause I wasn't home. I was attending a shower, too, my granddaughter is expecting her first child, Dominick, in early Dec. He will be my second great-grandchild, as her sister had Nicholas in early Sept. DH made do with left-over tuna and noodle casserole, three bean salad, and a bagel.

Ohiomom, your fish chowder sounds wonderful, as does your inclination for one-dish meals (They are always better the second day, don't you think?)

Last night was one-dish heaven around here - King Ranch Chicken. There are plenty of left-overs for lunch today.

Tonight its my version of gulash... ground round and onion, browned with enough moisture added to make its own sauce, stewed tomatoes, pasta shells ...and fried green tomatoes harvested just before last night's frost.

Still have a few of the hot rolls baked Saturday.... will warm one for each of us and serve them with home home-made apple butter.

Tonight it was veal chops with a brown sauce, a salad with blue cheese dressing, leftover mashed potato cakes, and crusty rolls. Yum.

Spaghetti with sourcream and parmesan cheese, crisp bacon slices to crumble over top. Nectarine for dessert. josh

DH is out of town, so tonight will be leftover from last night: homemade sloppy joe mixed into rice. Plain green beans on the side; peaches for dessert.

Scrambled eggs with garden tomatoes and a little jalapeno, toast, juice and bacon. After that, I made beef barley soup for the first time (from a box of broth and some bouillon, not stock from scratch). Worked out pretty well so I had a little of that just now with DH.

Another "one pot meal", gumbo with cornbread topping.

Still on strike.

Mr. Man worked late last night so it was cold cereal.

here's a chili recipe that i use.very tasty with cornbread and tea...Prep Time: 0 hours, 15 minutes
Cook Time: 3 hours, 00 minutes
Ingredients:
2 pounds ground beef
1 29-ounce can of tomato sauce
1 29-ounce can of kidney beans
1 29-ounce can of pinto beans
1 diced green pepper
1 diced medium onion
1/2 cup diced mild green chiles
1 to 6 diced jalapeno peppers (if heat desired)
1 29-ounce can diced tomatoes or 3 chopped medium tomatoes
2 teaspoons cumin powder
3 tablespoons chili powder
1 1/2 teaspoon black pepper
2 teaspoons salt
Preparation:
1. Brown the beef in skillet or microwave and drain off the fat.
2. Combine all of the ingredients in a crockpot.
3. Cook on low for 3-10 hours.
4. Leftovers can be frozen and kept for months.
5. Makes 12 servings, approximately 1 cup each.
