Apple butter apples

Been meaning to ask this question for some time and the excellent 'McIntosh style apples' thread finally prompted me to do so. I'm a big fan of apple butter and apples in general. I've got 30+ varieties planted in a young orchard but most are for fresh eating, some are multi-use and a few are cider specific. I don't think I have any that are mentioned as great for apple butter though I've seen that description applied to a couple apples I don't have as I've perused some southern apple nursery lists.

So, has anybody out there made apple butter from their apples and can you make some recommendations? I live in Reno, NV, where the spring frosts are unpredictable, summers are hot and dry and most apples need to be harvested by early November at the latest unless they can hang on a tree and withstand the mid to low 20 degree lows we sometimes have beginning in November (October and even September too, but I don't like to think about that as it's unusual:).
