If it weren't for seed heads I wouldn't have to mow my 'lawn'

To conserve water I never water my lawn, and as a result once we get our last rain for the year in March here in southern California the grass grows very slowly, if at all, and I wouldn't have to mow it for the rest of the year if it weren't for these pesky seed heads which keep coming up. My lawn is a mixture of mostly bermuda grass with some tall clump type grass mixed in plus some kind of grass which spreads by super thick stolens, plus weeds like Scarlet Pimpernel, plus some type of grass that only grows in the shady part. I want to know, is there any type of grass that doesn't produce seed heads? Maybe princess bermuda?
