Good to hear about the Interlaken, those are the ones I need to provide shade. Bad to hear about the Canadice, that's the one to stop the first rays of sun (assuming it lives, it hasn't woken up yet), but at least I guess I put it in the right place. I got the "old" vines moved over to the T trellis. They're only about 6" too low, maybe a little stretching will get them to straighten up and take up some of that. I can't believe how long and thick the lower cane on the Himrod got, too bad it's all on that one and not spread out to all the shoots. I bet both grapes on the Kniffen could've taken up the whole 16' by themselves. I think the T will do better and they can spread out rather than all run down the same wire, what a tangled mess. Now that the vine is pulled over the patch to weed eat isn't that huge, it may be tolerable for the rest of the year. Almost done on the trellis (of course I've been thinking that for a few days and I keep remembering something else needed to finish it). I assume that since I'm removing the whole lower tier and not replacing it that any time after dormancy will be OK to prune that part.

There is no difference between organic and non organic methods of growing that would impact the pruning method. Just choose the method that looks best to you and go with that. You don't have to prune your grapes, but they tend to produce best near the trunk. If you never prune and just let the vines grow further and further away from the trunk then the production and quality may drop off years down the road. As far as disease/pest control I would take a wait and see approach. Unless you have a ton of Japanese beetles, I haven't found it necessary to control them on well established grapes. Since yours are newly planted I would control them the best you can for a couple years at least. You may never encounter a disease with the grapes so not much point in preventative spraying. I would just wait and see.

I still have a few hundred grapes to prune, its not to late to prune them as long as you dont bleed the vine out. Train the vine the same way as what you've read, it just goes over a arch instead of a horizontal line. It all depends on what support system you plan to go with. A grapevine climbing onto the garden arbor should be trained differently from a vine on a 6' Cordon system. From your photos, it appears there is no such support system, but some temp posts to support them. This is something you must decide first. The vine can't be supported that way.
