Can I prune my grapes after fruit?

I want to go from two tier kniffen to a high T trellis.

After fruiting can I cut off the lower tiers or will that take away too much energy from next year and/or spur too much late season growth?

I know if I cut them now I'll hurt the fruit quality.

Even though the Reliance has 40 clusters it is very vigorous.

The Himrod not so much, and where it's showing vigor is on one of the lower canes. It might have 10 clusters.

Himrod fruits early August, Reliance fruits mid-late August.

It won't do me much good to cut one and not the other, other than it will make it easier to step across under that vine.

These were well rooted plants from a local nursery planted last year.

My guess is because of the Himrod I'll be using a weed eater to cut grass on the other side (the trellis is up and the temporary boards for the lower tier block entry from the end).
