Cucumber question?

I planted three national pickling cucumber seeds in a container (as a habitat for frogs in my new greenhouse as well as fresh eating). The resulting three plants were totally different in flowering habits. One was punny and flowers did not open well or set when I polinated them. The second put out a single female flower at the occasional leaf junctions, producing healthy cucumbers. The third plant put out TWO female flowers at the junctions, with each responding perfectly to pollination efforts. I pick male flowers, pull off the petals and touch them to the female blossom.

I'm thinking I would like to save seeds from the double female plant. Is the double fruiting unusual? How would I go about saving the seeds?
