Apple tree novice-help please!

I posted on this forum in late spring regarding pruning my September Ruby semi-dwarf apple tree. Since I would like to keep the tree shorter (I am only 5'1"), I was given the advice that I should go with an open-center form to the tree. The tree currently has three competing leaders coming out in a fork at the top (see pictures) and it is already about 9 feet tall. I missed the opportunity to prune it this spring before it blossomed. Now I am kicking myself as I was suprised to find loads of baby apples on the branches including two of the tree upright branches. I had no idea my tree would produce fruit this year and the branches of the tree are not sturdy enough to hold the apples. Some of the branches at the bottom that also contain baby apples are almost horizontal and very spindly.

Since I know very little about apple trees I am hoping someone can give me some advice of what to do with my tree this year. Should I take all of the apples off or just thin them? Will the narrow crotch angles at the top where the tree branches meet break with the weight of the apples? Will the horizontal bottom branches break or pull down below horizontal if they are allowed to bear fruit? If I cut off the tree where the three leaders meet when I prune next spring the tree would only be about 5 feet tall. Should I be letting it grow taller as a single leader first before heading the top so that I can walk under the tree?
