how is central and eastern Washington state so good for fruits?

I understand the dry, sunny climate is good for apples, peaches, and cherries, but one thing puzzles me:

Based on the large average diurnal temperature ranges, average last and first frost dates, and record low temps for each month for Yakima, Walla Walla, and other cities in these areas, it appears that late spring freezes and early autumn freezes are the norm, rather than the exception...is there something I'm missing about the climate in the part of Washington that is East of the Cascades?

It seems to me that frost would be a major issue yet it seems that aside from this year, it's not.
