When do you plant your fall garden?

"Historically" I've planted my fall garden, which is predominantly Spinach and lettuce around the 1st of Sept. Sometimes that works well, more often than not, it doesn't, the spinach and other greens start to develop and then shut down and wait for spring.

Today, August 7, I was planting a second crop of beans and corn and decided to plant spinach as well. I'd done some research online and read some good results when spinach is planted in the first week of August. We all know that spinach doesn't like hot weather and will "bolt." The rationale other folks suggest is that the plant has to be developed enough to "go to seed" and while late august is hot, the plant won't be far enough along to bolt. That "sorta" made sense to me I decided to experiment.
