Grafted trees vs seed grown

I'm extremely new to fruit trees, bought a property and have been starting an orchard. I've been buying trees from the local nursery ( all grafted ), to include avocado, lychee, mango, loquat, grapefruit, cara cara orange, etc. The guy from the nursery gives lectures at the garden fair where he says grafted trees are the only way to go to insure you get the fruit your after. The grafted trees are expensive.

My Filipino neighbor is planting trees she says she is growing from seeds (same as me but also rambutan and longan ) - used to do it all the time in the Philipines supposedly. Neither of us is really producing fruit yet, but am I spending a lot of money when I could be propogating from seed ?

Please expain if you have the time.
