Best soil condition for repotting?

I'm using a looser soil mixture than I used to. I used to have up to maybe 30% silty/clayish mineral soil in my mixtures, along with peat, compost, and perlite. Now I'm using coir & finely ground bark, along with perlite. The mixture drains better and the plants never show over-watering symptoms, but the mixture is also less coherent.

When it's time to repot in a larger container and take the soil/rootmass out: is it best to have the soil damp (possibly hold it together better, and do less root damage), or is it best to let the soil mass dry out, so the soil might shrink free of the sides of the pot?

For instance, I've got some vines I started from cuttings seven months ago in a smallish pot. I know that abundant roots bind the soil mass together, but I'm not sure how much root mass there is yet.
