What do you do with all your cukes?

I will be anticipating a large harvest of cucumbers again this year. Last year was the first time I planted them and they do very well here. So well in fact, I was at a loss as to what to do with them so we ate a lot in salads and when I couldn't keep ahead of the harvest I found a recipe for cucumber relish. It was pretty good, certain members of my extended family really liked it. this year I wanted to do something different, I have looked up recipes for canning cucumbers in my canning books but there doesn't seem to be much. I was wondering what everyone here does with all their cucmubers?

I make pickles - Bread & Butter and Kosher Dill, they make great gifts if your family doesn't raid the cupboards.

There are lots of recipes shared on the Harvest forum, or you can get the Ball Blue Book of canning (I saw it in my grocery store just this week) and get some ideas there. Lots of websites have good canning tips and recipes - just remember to follow safe canning techniques (the Ball book is all about those).

I have loads of cucumbers and I make refrigerator pickles. Canning is too much work and this recipe doesnt require it. My husband worships these pickles and gives himself ulcers eating too many of them. I really love them too!
I use this recipe that I found on Allrecipes.com. I use only HALF of the sugar called for, and I also add about a tsp of celery seed and a tsp or TBSP of dill seed.

Homemade Refrigerator Pickles

1 cup distilled white vinegar
1 tablespoon salt
2 cups white sugar
6 cups sliced cucumbers
1 cup sliced onions
1 cup sliced green bell peppers

In a medium saucepan over medium heat, bring vinegar, salt and sugar to a boil. Boil until the sugar has dissolved, about 10 minutes.
Place the cucumbers, onions and green bell peppers in a large bowl. Pour the vinegar mixture over the vegetables. Transfer to sterile containers and store in the refrigerator.

Make a cocktail!! I'd boil water, dissolve some sugar, turn off the heat and throw the basil in, let it steep, strain, then add vodka or rum and freeze it in an ice cream maker. If you're not a drinker, maybe frozen lime-basil iced tea or sorbet instead. Trailrunner, I hear what you are saying about the value of work, & how it contributes to lives, to society, to who we are. We are interdependent & couldn't get through a single day without the contributions of 100's of people! Isn't that a humbling thought? The efforts of so many are simply vital! One week without trash pick-up illustrates that reality beautifully! We really are all connected. We also live in a world where WORK is given so very much attention & adulation for all the wrong reasons! What people do to earn money (& of course how much they earn!) often defines them to an extent that I personally find bizarre. I know you know what I'm talking about! That is why I care less about how people earn a living than with other features of their humanity. What interests me the most about the people who have impressed me over the years, is a certain "quality of attention" they give to a task, no matter how grand or humble it may be. That presence, that "flow" as it has been called, is being fully human, & is strikingly beautiful. The way someone who is mindful & present sets a table, prepares a meal, interacts with a child, speaks to strangers, can mesmerize me. We can witness life in it's fullest, most whole, complete & beautiful, by seeing even the simplest thing done with great care. But, moments like that can easily be overlooked & or seen as meaningless in this world so obsessed with career paths & success strategies. Still, indeed, I well agree that a person can perform the work they do for a living with the care, attention & presence I am referring to, & when that happens, we are all made better! (Actually, you, your dh, your son & his wife (at the restaurant) impress me as fine examples of people who live like this!) You nursed the sick, you sang opera, you ran the trails. You have seen others nurse, sing & run as well. I would imagine that you did all of these things attentively, lovingly, mindfully, but certainly you have witnessed these tasks performed robotically or in a "check list" sort of fashion. For me, it is not the "what" but the "how" that leads to completion, wholeness, fufillment, whether we are "working" or not. Whatever we are doing, matters little in the end, but what could be sweeter than to feel content with "how" we've done things, no matter what they were, no matter how small or insignificant? To live with true quality of attention, to do our best, no matter if anyone is looking or a paycheck is in the mail. With this approach to life, when one "retires" the habit of living mindfully & being present has enriched the heart & mind so fully that a "deficit" or void of any kind is not perceived. Life in all of its fullness continues to surprise, delight & offer rich rewards, even without the job, title, paycheck & all the status & approval from others that those things confer.

Thanks, Annie. I might try some determinate tomatoes next spring and see what happens, but I have very little experience with canning - basically only with fig preserves. Here is the rye bread recipe I made that I think is very good with tomatoes: Rye Bread with Caraway and Fennel 1-1/2 pound loaf (approx.): 2 tbsp caraway seeds 1 tbsp fennel seeds 1-1/2 cups water 2 tbsp onion powder (can substitute 1/4 cup pureed onion) 1-1/8 cups dark rye flour 1-7/8 cups bread flour 2 tbsp semolina flour 2 tbsp VWG 2 tbsp brown sugar 1-1/2 tsp salt 2 tbsp olive oil 1 tbsp IDY Grind caraway seeds and fennel seeds in a coffee grinder that is used only for spices. Add the seeds to the water (I use a 2 cup Pyrex measuring cup) and microwave for one minute. Stir and microwave 20 more seconds, and then add the onion powder (or pureed onion if you are using that). If using pureed onion instead of onion powder, you can reduce the water by 2 tablespoons. Allow the ground seeds to sit in the warm water until the water has cooled to about 100 degrees. Meanwhile, add the flours, wheat gluten, sugar, and salt to the bread machine pan and stir gently with a plastic spatula. Add the oil to this mixture and stir slightly. Insert pan into the machine and lock in place. When the seeds have soaked for at least 15 minutes, add the seed/water mixture to the bread machine pan. Close the lid and add the yeast to the yeast dispenser. Set the machine for small loaf (1-1/2 pounds), medium crust, and regular loaf, or you can use the pizza setting if you want to shape the loaf yourself. Start the machine. When the bread is done, remove from pan and rub all sides with butter, and then allow the loaf to cool on a wire rack before storing it in a bag. Wait at least one hour before slicing. These directions are for the Panasonic bread machine that I have, and so you may have to adjust them if you have a different machine. The bread has a very intense flavor, and so you can cut back on the seeds/onion, but I like with a strong flavor. It is not as versatile as plain bread, but it makes great sandwiches. Grainlady gave me the suggestion to soak the seeds first, so that they will not cut the gluten strands, I think. Anyway, the loaf came out nice and light - not dense at all. Lars

Sachets just add one stink to another. Clean the drawers with vodka after your stain has cured in. Sitting in the garage made them smell worse as they were not getting use or air circulation. Heat breeds bacteria, which breeds stink, which is what happens when you do not use something and it sits in an unairconditioned environment. Vodka will kill the bacteria. Lots of alcohol in vodka. Use the cheapest brand money can buy and clean your drawers with it a week or so after your stain has cured in. You might have to repeat it in the warm weather. Just like houses that are not occupied, the bathroom begins to smell like the toilet was never flushed, drawers will have bacteria build up and that is where the odor arises. It's called incubation. You are growing a culture, sotaspeak.

You are right - there isn't much you can do with canning. All kinds of pickle recipes and sweet and dill relish is about it.

We always make several types of pickles but then we are both pickle lovers. And we make cucumber bread (it freezes well after baking), cucumber jelly, cucumber & orange marmalade, cucumber & onions salad (marinated in oil & vinegar - keeps for days in the fridge), and the rest we give away to neighbors. ;)

Make pickles not just dill and sweet pickles either, but Chinese pickles.

My husband peels them and eats them like a popcicles when it is hot out. If he did not eat as many as 24 plants can produce, I would sure be making pickles!

After the fresh eating, giving away, pickles, freezer pickles, relish and even tried freezing them, I did cucumber marmalade. It didn't set but it's an interesting change.

Then I took about 30 more out to the compost pile. Now I have a new stack starting. Cucumber soup and cucumber ketchup are on the list to try.

Well, we mostly eat them fresh. I will go out in the morning and gather some, take them inside to wash, slice, and place in the refrigerator. If there is a container of sliced ready-to-eat anything right in the fridge, in my house, it has the best chance of being eaten. Usually gone by the end of that day.

I have made Polish-style cucumber salad, too, with fresh dill, cream, and red onions. But I am the only pickle-eater in this family, so I have never made any just for myself. I may try the above refrigerator recipe, though, because it looks fairly simple to accomplish.

I'm as green as a cuke with envy! All my cukes got the wilt this year. I started with nine plants, then I was down to three, and just yanked those three today. I was planning on a summer of cucumber salads. Have to console myself with the bean harvest.

Geez, I didn't even see that you had already tried looking at pickle recipes. Sorry! :)

A friend of mine told me about an excellent, simple cuke salad that she makes:

sliced cucumbers
thinly sliced red onion
red wine vinegar
salt & pepper.

I don't know the proportions (probably "whatever you like") and I've yet to try it (no cukes yet in my Maine garden, sigh... and hopefully they'll do well this year; last year I had to buy them to make my pickles) but it sounds SO good.
