Putting in fruit trees for the first time!

My wife and I have escaped living in the city, so now that I have some space I am putting in some fruit trees - primarily apple with a couple peach and cherry. My ultimate goals are cider (sweet and hard). Please take a look at what I am planting and give me any suggestions you have.

Apple

Honeycrisp (6-7) - my wife's favorite, used as the base of the cider and for eating

Cox's Orange Pippen (2) - looks interesting for a variety of uses

Granny Smith (1) - pies/eating

Grand Gala (1) - mostly for the applesauce

Winesap (1) - for the cider

Golden Delicious (2) - for pollination mostly, though eating too

Crab Appe (1) - Dolgo most likely, for tannin and pollination

Peach

Red Haven (2)

Cherries

Blackgold (2)

I have experience with the hard cider making and tree care as they get older, but not much experience starting them early on. I don't like the idea of having just one tree of some varieties, but cost is a factor for this year and I will get around 10-15 additional trees over the next few years. If somebody could give me some advice on the varieties or point out something I am obviously missing, it would be greatly appreciated. Thanks.
