Rejuvenating an Orchard: Now or Summer?

I have 2 apple trees, 2 pear trees and 1 plum tree that I inherited, and all are in need of some rejuvenation pruning. Until recently I thought all pruning should be done in the late winter, but now IÂve learned about summer pruning to control growth and vigor.

I did some very basic pruning on these trees last year (removing broken and rubbing branches) and ended up getting a lot of unwanted growth (lots of watersprouts on a pear tree for instance). IÂm wondering if I should do more pruning now or just wait until summer?

All of the trees need pruning to open them up and let the light in, but I donÂt want to do more harm than good with a major prune-job only to stimulate lots of new (and unwanted) growth. Each of these trees only produced fruit in one of the last two seasons so I know they really need pruning, but IÂm confused if I should do it now, or wait a few months?
