What's the 'natural' unpruned growth/fruiting of fruit trees?

Possibly a dumb question...

But my dream is to have 30-40 fruit trees, a number of varieties of each species. A really wide range of fruits.

Reality is, I don't have the time to spend 3 weeks each year pruning. It is not going to happen. I hate it but it's my reality.

I do have time to deal with diseases, prune scaffold problems, take care of the basics.

My question is- what if we were to just allow the apples, cherries, plums and pears to grow to whatever their rootstalk determined? Will they grow into a nice shape and produce fruit well? Just be large?

Biennial bear? What do own-root seedling fruit trees do?

Hmmm.....
