Pruning my new fruit tree pics

The left is the tree as is from the nurseries. The right is the post pruned picture. Also I festooned with rocks(someone previously posted pictures where they got their limbs lowered by tying metal looking objects).

The pluot is the lowest and most ideal scaffold height I would like. The other ones, it looks like the nurseries cut the lower limbs becuase I can see scars. Sucks cuase that would have been nice and at knee height.

The tape measurer is set at 2 feet from surrounding ground level.

It was quite unnerving cutting 2/3rds of a brand new tree down. I don't have the heart to straight up cut the tree 2 ft as suggested by numerous websites because I don't see any buds on the trunk that low. If there are no buds at all below the 2 feet mark, will limbs just somehow come out of the trunk?
